FOUR!!!! Or Sunday Dinner after 18 holes

So the boys are golfing today so the non-golfers and the golfers will meet here for dinner. I am stuck on the salad I made last Sunday, but it’s new to them and we like it. I just needed to make some more dressing, voilà, no big now I have enough for a few more rounds of that great apple salad. I wanted to keep it simple so I ran to Costco. Normally I avoid Costco like the plauge but they carry Prime Beef, and let me tell you it is f-ing great!!! So I have New York steaks in the fridge with my own Dry Rub on it. I make a big vat of it and it keeps for ever. Then I threw a butternut squash in the oven to roast. Next I sauted a few shallots, threw in an ear of corn when it’s close to done and seasoned that with thyme and salt and pepper. I think every part of a dish should be seasoned well enough to eat on it’s own. So make sure it takes great before you do anything else. I take the roasted butternut squash out when it’s done, then scrape it into my food processor to purée. I season that, then add it to the shallots and corn. Cook it just to dry it out a bit. Then I put it aside. I’m going to make a polenta with butternut squash. I’ll cook polenta until it is done then add the sqush mixture and some Parm and you’ve got it. This is a great version of polenta, so good I would be happy with a bowl of the polenta and a salad. But the golfers will be hungry , so crank up the grill. I cook those bad boys over a really hot fire for 5-6 minute per side for rare , medium rare. And there you have it. My friends bringing sorbet and another Sunday dinner will be enjoyed by all.
