Party Time!!
My original idea for a blog had always been about how to entertain while having a life. I love to have parties. People always ask how I pull it all together. Well, beside the fact I worked as a professional chef, at Spago, I have thrown hundreds of parties and know how to do it.
It all starts with putting together a great group of friends. Done that. So in 2 weeks I am having 10 people for dinner. Only two of them have been here before, so i am looking for something special. This morning I sent them all an email making sure no one had any diet restrictions. Score!!! I can make whatever I want. Now I need to start planning my menu. I know this group are serious wine peeps, so I am looking for food that will highlight that. My menu..I think.
Warm Seasoned Nuts
Spicy Tuna Tartar in Sesame Miso Cones
Individual Wild Mushroom Tarts with Fresh Herb Salad
Lamb Shanks over White Beans
Chocolate Salty Carmel Tart
When I know I am going to be doing a lot of entertaining I make the seasoned nuts in bulk then freeze them. I know, some people thinking freezing is some kind of food blasphemy, but they are wrong.
The tuna cones, a recipe from my Spago days are just amazing and great with champagne. Plus most people have never had them. I have a big vat of th ebatter in my fridge already. It never goes bad…or at least last a really long time.
So stay tune….now if I can only figure out how to get that dog off my avitar. Down boy!
